doctors and such

Warning! medical story coming up!
OK so today I went and had my baseline mammogram done. Now you hear about mammograms all the time...how horrible they are and such. Well my experience today was not too bad. I was expecting a lot more discomfort and maybe even some pain but in those I was disappointed. It was a little awkward and not exactly comfortable or a walk in the park but I have definitely had worse experiences at the hand of doctors and technicians...like the time they couldn't figure out how to draw my blood and poked me like 17 times, or any time I have been to the dentist has been way worse. Even my EKG with ultrasound was way worse. When they were doing the ultrasound of my heart and mashing down on my breast to get to see my heart THAT hurt. That hurt really badly I wanted to hit someone or gun them down. Today didn't. It was also interesting today because the place was set up with not only coffee available but hot water for tea or hot chocolate( they even had sugar free hot chocolate) and there were pretzels, cookies, graham crackers for you to snack on. At the end when they gave me the survey to fill out I also got a recipe and a peppermint. I wonder if they give out the same recipe all the time or if they rotate them? I don't believe I have ever posted a recipe on here but this one sounds good and it just amuses me that they gave me this as a healthful recipe. First thing I looked at was the calories now remember this is a healthful recipe I was expecting the calories to be something less than 300. I was wrong! 438 calories! Now for me it is probably 1/4 of that because the serving is way to big for me. The rest of the nutritional info was not too bad but still nearly 500 calories for what is just part of your meal?Healthful? Of course o the card they call it a Rich recipe for a Healthy life. Rich no doubt about it!So here it is:
Spinach and Ricotta Stuffed Manicotti
1lb manicotti
1lb spinach leaves
2 cups low-fat ricotta cheese
1 egg
1/4 cup fresh grated parmesan cheese
1/2 cup bread crumbs
salt to taste
fresh ground black pepper
nutmeg to taste
2 cups tomato sauce
Preheat oven to 350 F.Cook the manicotti according to package directions. Heat non stick skillet over high heat. Wash spinach and add it to the skillet with just the water that clings to the leaves. toss the spinach until it is wilted and remover from heat. Put spinach in food processor and puree. add ricotta, egg and parmesan and puree again.put in mixing bowl add bread crumbs and season with salt pepper and nutmeg. Fill the manicotti wit h the spinach mixture. Spread 1/2 cup tomato sauce on bottom of a large baking dish, place filled manicotti in a single layer and cover with remaining tomato sauce. Cover dish and cook 20 minutes, uncover and cook about 10minutes more until edges are bubbly. makes 6 servings.
Definitely not a quick dish to make but it sounds yummy! and if you were to cut in half the serving size it wouldn't be too bad on the ol' waist line. especially if you made a salad to go with it.
